Sparkling & Rosé Swiss Wines
 
A number of sparkling wines are made in Switzerland, many using the Methode Traditionelle production technique, identical to that used to make Champagne and Crémant de Bourgogne.  The principal grape variety used is Chardonnay, which makes very refreshing sparkling wines of high quality.  Rosé wines are made from a number of different grape varieties, including Gamay and Pinot Noir - which is used to make the famed Oeil-de-Perdrix Rosé wines, which originated at Neuchâtel, and whose name comes from the very pale pink colour said to resemble that of a Partridge's eye. Swiss Rosé wines are generally light and fruity, and make excellent summer wines. Chilled, they make a great apéritif, and are also good with pasta and spicy dishes.

Bernard Rochaix makes this very dry 100% Chardonnay-based sparkling wine at Peissy just outside Geneva, using the Methode Traditionelle production technique as used in Champagne. Medium straw, aromas of vanilla combined with exotic fruit and citrus, round, rich, full body. A very satisfying bottle.

A bit of a rarity - a sparkling wine made from Chasselas grapes grown around the Valais town of Sion, using the "méthode traditionnelle" as used in Champagne A clear pale yellow, with a nutty nose with a hint of citrus; on the palate there is a fine mousse, and masses of fruit. Dry, with a fresh lively finish. Ideal as an apéritif, also good with seafood, oysters, lake fish etc. Serve at 8° - 10° C

This Rosé, made from 100% Pinot Noir, is an extremely pale rose-petal strawberry-red - supposedly the same colour as the eye of a partridge, from where it takes it's name. It has light fruity aromas, and a good fruity flavour and relatively full body for a rosé. Good honeyed aftertaste. Chill to 8-9 degrees, and drink as an apéritif, or with grilled meats, veal, poultry, or spicy Asian foods.

Dôle Blanche is a rosé wine made, as is the case with red Dôle, from a mixture of Gamay and Pinot Noir grapes. This example has a light salmon pink colour, with a delicate fruity nose redolent of strawberries. On the palate it is soft and very slightly off-dry, full-bodied, and with good structure. Good length.
