This Bourgogne Hautes Cotes-de-Nuits is a blend of 70% Chardonnay 70% and 30% Pinot Blanc; only about 2000 bottles are made each year. Vines have south-easterly exposure, are aged from 10 to 25 years, and are trained using the single Guyot method. Soil types are clay/limestone on a base of hard Comblanchien limestone. The "Lutte Raisonnée" method of pest control is used in the vineyard. Following the harvest, the wine undergoes slow temperature-controlled fermentation, and light filtration prior to barrel-aging for 12 months. A limpid pale golden-yellow, the nose is floral with honeyed notes. On the palate there is excellent attack with masses of fresh ripe fruit, hints of honey, and good acid structure. Good length with honey on the finish. Serve at 15 to 16ºC with seafood, freshwater fish, or white meats. Drink within 5 years of the vintage.

Wines from Savigny-les-Beaune, with their medium purple robe, and heady scents of ripe red fruit, are said by some to express femininity. This 100% Pinot Noir wine is from a vineyard known as "Les Fourneaux" ("The furnaces"), where vines aged on average 25 years grow on chalky-gravel soils. The grapes are manually harvested, selected, and de-stemmed prior to crushing, and natural-yeast fermentation follows, temperature controlled in stainless steel for approx 15 days. The wine is then oak-aged for some 12 months, 35% of the barrels being new each year. The wine is bottled unfiltered, and may therefore throw a light harmless deposit in the bottle. A medium intensity red-purple with a nose of morello cherry, blackcurrant, and raspberry. On the palate this wine is dry, very fruity, and has lithe silky tannins. Long dry finish, with tannins and a subtle earthiness showing. Drink around 15-16° C , with magret de canard and blackcurrants, or red and white meats.

100% Pinot Noir grown in the "Allots" vineyard. Vines are aged 30-60 years, and are trained using the siimpl,e Guyot system. Annual production is small, typically 5000 bottles. "Les Allots" is located at the bottom of a south-easterly facing slope, and soil types here reflect the location, consisting of red silt and calcareous material wshed down the slope. "Lutte Raisonnée" pest control techniques are used in the vineyard. 100% manual harvesting is followed by cold pre-fermentation maceration, then 15-18 days of fermentation in temperature controlled stainless steel tanks, with a maximum temperature of 32ºC to preserve flavours. Daily pigeage helps obtain maximum extraction of pigment. The wine is then aged in small oak barriques for 15-20 months, 30% being new oak each vintage. The wine is fined with egg albumen prior to bottling.
Serve at 15-16°C Keeps 5-15+ years from the vintage.

The vines of Pommard have throughout the centuries been coveted by Royalty or by religious orders, and the vineyard today known as "Les Fremiers", which takes its name from the old French word "Fremyer" meaning firm, or solid, was, in the 14th century, owned by the Abbey of Maizière. "Les Fremiers" is small - just 1.6 hectares - and is located on the lowest slopes at the southern extremity of Pommard, adjacent to Volnay, and has good south-easterly exposure. The vines are aged on average 25 years. After the grapes are crushed, the must undergoes a pre-fermentation maceration for 3 to 5 days at 15°C, followed by fermentation from 12 to 15 days at a maximum temperature of 34° C. The wine is then stored in oak (10-15% new each year), where malolactic fermentation occurs, for 18 months prior to bottling.
Pommard 1er Cru "Les Fremiers" combines elegance and power. A deep cardinal red, with a nose of red berry fruits and Morello cherries, which are reflected on the palate, where there is good attack and a powerful yet smooth fine tannic structure. Very good length. Approachable now, but will improve with further bottle age. The producer advises that if cellared correctly, this wine will peak at between 8 and 12 years of age. It is advisable to open the bottle two hours before the meal, and to serve at 16-17° C.

From the vineyard "Au-dessus-des-Malconsorts" in Vosne Romanée - literally "above Malconsorts" which is, as the name suggests, further up the same south-easterly facing slope where the vineyard "Malconsorts" is to be found, and neighbouring no less than La Tâche. This 100% Pinot Noir wine is made in tiny quantities - just 2500 bottles in a typical year. The vines are aged on average 30 years, and grow on brown limestone-based soils, on a pink limestone base. The "Lutte Raisonnée" method of pest control is used in the vineyard. Following harvest theere is a pre-fermentation maceration of 4-5 days; temperature controlled fermentation follows for some 15 to 18 days. The maximum temperature permitted is 32°C, in order to preserve flavours. Daily pigeage is used to maximise extraction of pigment. The wine is aged in small oak barriques, with 30% new oak each year. Bottling takes place without filtration, so the wine may throw a harmless sediment. A deep ruby red, with a fresh fruity nose, very elegant. On the palate it's a racy wine with intense and powerful dark and black fruits, with toasty oak and hints of tar and smoke. Good long finish, again with dark fruits, some spice, and silky tannins showing. Classic Vosne Romanée character. Keeps 5+ years. Serve at 15 to 16 ºC with meat and game dishes, either roasted or in a sauce, and fine cheeses.
