The Vrignaud estate comprises some very rustic old farm buildings in the centre of Fontenay, and some 7 hectares of Fourchaume, the remainder being basic Chablis. Part of their production is sold to the local co-operative, La Chablisienne, but they now work 2 hectares to make their own wines, which they sell in France and export mainly to the UK and Belgium. Vinification methods are traditional. This wine has a light yellow colour with a fruity nose; on then plate it is gentle and soft, with typical Chablis minerality. Works well with fish and seafood dishes.

Gérard Duplessis owns 6.8 hectares of various plots in Chablis, all planted with Chardonnay vines of an average age of 30 years. After the grapes are picked and pressed, there is an alcoholic fermentation of about 8 days, followed by malolactic fermentation in stainless steel. The wines are then matured in oak for 4 to 6 months. The wine is normally bottled around months after the harvest.
According to Gérard Duplessis, it is important to wait between harvest and bottling to produce wines with top quality and good ageing characteristics.
